2021 Valhalla
In Norse mythology, Valhalla is the great hall where Odin greeted the souls of heroes fallen bravely in battle. Valhalla is also the name of a great pub that caters to Rice University graduate students. Depending on who you ask, one of those facts weighed heavily on the naming of one of Pedernales' most popular blends.
The 2021 vintage is comprised of Montepulciano (52%), Dolcetto (34%), and Sangiovese (14%). The season allowed for a long, even ripening curve, and the resulting fruit was incredibly expressive. Fermented in stainless steel, then finished for 18 months in neutral oak, this wine boasts a juicy fruit core framed by bright acidity and fine tannins. This is an incrediby food friendly wine, and we wouldn't hesitate to pair it with anything from a Margherita pizza to a rack of lamb. Drink now or hold through 2030 (but why wait?).
